The uniform: Order everything in black. (Jacket (Dogi), Hakama, and Belt (Obi). The Juban only comes in white but you will rarely wear it. (It's like an undershirt and mainly worn when training in colder conditions.)
The sizing charts are on the landing page as well. Measure before you order and prepare to think in centimeters. Pay special attention to the overall height compared to the hip to ankle measurement on the hakama. Especially if you are between sizes on the height measurement, the hip to ankle measurement will let you know more confidently which one to get. (I for example have shorter legs and longer torso for my height.)

The belt that comes standard with this uniform is better than nothing... but I would spend the extra $37 right away and get a better one while you order your uniform. Color is your choice, they have no meaning. Here is the link. https://tozandoshop.com/collections/iaido-obi/products/nishijin-cotton-kaku-obi?variant=34282119495813
The Sword:
I will provide two links. The first link is for the more customizable sword meaning you have more options in selecting the guard and the blade type and the hardware on the handle.
On both links you will be able to have some customization though and they are both of the lasting quality to safely do your iaido practice. They will also both have the option to select the length of blade/handle for your height. On the first link (The more expensive one) I would recommend either 1. The Keiryo (lighter) blade. It comes with a standard bohi blood groove. 2. The Standard Blade but with the deeper blood groove. The weight with the deeper groove will be the same as the lighter blade but it will cost about $40 more because it basically is a thicker blade except for the extra groove depth. 3. Standard blade with standard bohi (blood grove).
Note: The more affordable option link 2 with less customization is a standard weight blade also but you can ALSO choose the deeper grove on it for the $40 surcharge. Although "lightweight blade" is not an option for that sword, with the deeper groove added it is still cheaper than the "lightweight blade" on link 1.
Also, with both swords you will have a choice in the saya (scabbard) you select as either the more shiny finish (Kuroro) or the flatter finish (Kuroishime).
